Light Key Lime Cake
Ingredients For The Cake:
- ½ cup butter
- 3 ½ cups almond flour
- ¼ cup coconut flour
- ¾ cup sugar substitute (Stevia)
- 1 Tbsp. baking powder
- ½ tsp salt
- ½ cup unsweetened almond milk
- 4 large eggs
- 1/3 cup key lime juice
- 2 tsp key lime zest
Combine the baking powder, the flours, and salt. Mix the sugar substitute with the butter until they become light. Beat the eggs until they become completely mixed. After, add half of the almond flour mixture. Mix the lime juice, lime zest, and almond milk and add in the rest of the almond flour.
Take a 9×5 pan and grease it. Pour in the mixture inside the pan and let it sit for 45 minutes.
After, bake it at 325F for an hour, however, make sure that you cover it up with foil before. The edges of the pie should become golden brown when ready and when you touch the top of the cake it should be firm. You can also check the middle of the cake by using a toothpick.
After it is baked, let it cool for 15 minutes and flip the cake onto a baking rack for it to cool faster.

Ingredients For The Cake:
- 3 cups of brown sugar
- 1 pound room temperature stick butter
- 4 cups all-purpose flour
- 6 large eggs
- ¼ cup evaporated milk
- 1 tsp vanilla
- ½ cup fresh key lime juice
- 4 tsp minced key lime zest
First, beat the butter until it becomes fluffy. After, add the sugar to it and beat it for 5 minutes.
For this, you might want to use a stand-up mixer. For 10-15 minutes, beat the mixture inside the stand-up mixer. Mix one egg at a time until their yolk is mixed together with the other ingredients.
Separately, in a different bowl mix the milk, juice, vanilla, and lime zest together. Gradually, add flour to the mixture. After, alternate the milk mixture and the key lime juice.
Put the mixture into a 10-inch baking pan and tap it to get rid of the bubbles. Firstly, make sure you grease up the pan. For an hour and 45 minutes, bake the butter on 300F.
